Carlo Innocenti, owner and chef, is a truly unique person, with a thousand skills. As a young man he was an excellent blacksmith and made much of the ironwork at the Locanda himself. Then he had a passion for photography and for years his video production company collaborated with the RAI (Italy’s national public broadcasting company).
But then his other passion, cooking, brought him into the restaurant business and for years he has been managing bars and restaurants.
Pascal, of French origin, who has lived in Italy for many years and is fluent in four languages, joins Carlo in the management and savoir faire of the Locanda.
